Awesome Spinach Veggie Spread

Today I made this awesome spinach veggie dip that was so good you could eat veggies all day with it! The kids LOVED it too, so I’ll definitely make it again.
Spinach Veggie Dip
Half Bunch Spinach (chopped in processor)
1/2 cup cashews
1 cup water
1 Avocado (pitted)
Dash salt
Dash garlic
Dash onion pwdr
Dash Sweet Basil

We actually put this spread on some bagels for lunch, and I’ve also made this spread with black beans, corn, and tomatoes and it is awesome on bagels! This one sandwich has nearly your entire daily value of protein, so seriously don’t ever worry about getting enough protein on a vegan diet. Want to see?
Protein Content:
Black Beans = 5 gms, Spinach = 1 gms, Avocado = 1 gms, Cashews = 1 gms, Corn= 2 gms, Wheat Bagel = 9 gms
Total Protein for this sandwich: 19 grams
Protein need for 150 lb male = 22.5 grams

Last week we finished off the chili sans carne by putting it in whole wheat tortillas with shredded spinach.

After watching the video Fat, Sick and Nearly Dead, we learned about the veggie super juices you can make, and tried one this morning that wasn’t half bad.
Green Super Juice
Put into the juicer:
1 Bunch Kale
2 Granny Smith Apples
3 Stalks Celery
1/2 Lemon
1 inch ginger root

We also added 2 carrots to ours, and it was not bad at all. I could definitely drink it on a daily basis, and it’s got so many powerful nutrients in it. Watch the documentary and find out what it did to two overweight/obese guys.
