Whole Wheat Veggie Pizza

One of our favorite meals that we keep making over and over again is this delicious whole wheat veggie pizza. It’s wonderfully healthy and satisfying. We make 2 large pizzas and eat them in 2 or three days.

Whole Wheat Pizza Dough
2 2/3 cup water
4 tsp sugar
2 1/2 tsp salt
4 Tb Olive Oil
4 Tb Cornmeal
6 cups whole wheat flour
2 tsp baking pwdr
1/2 tsp garlic pwdr
1/2 tsp onion pwdr
3 tsp active dry yeast

Add all ingredients above to your bread machine and set to dough mode. (or use a mixer with a dough hook, and let it rise covered for 2 hours.) Spray 2 cookie sheet pans with Olive Oil and sprinkle them with Cornmeal. Oil your hands to handle the dough, and divide it into two. Spread dough out onto the two pans, and sprinkle with Cornmeal again. Preheat oven to 375 degrees and let dough rise again in the pans while you prepare the pizza sauce.

Pizza Sauce
3 8oz cans tomato sauce (24 ozs total)
3 tsp dry oregano
1 1/2 tsp marjoram
1 1/2 tsp dry basil
1 tsp garlic
1/4 tsp salt

Chop up an assortment of veggies. We like to use:
Bell Peppers
Mushrooms
Shredded Spinach
Tomatoes

Punch down the dough again, then spread with pizza sauce. Add vegetables GENEROUSLY because they will shrink up. 🙂 Then bake for about 20 minutes. Check for desired hardness. We like ours soft, and this usually plenty of time.

DON’T FORGET! The last thing after you pull the pizza out of the oven is some freshly chopped avocados! This totally makes the whole pizza! 🙂 You can also add blended cashew pieces that have the texture of Parmesan cheese.
