Our New Favorite Comfort Meal (Kids Approved)

This dish is super quick and easy, and so satisfying. Even the kids scarfed it down, and DH told me this was the best meal I’ve made since we’ve been vegan. So definitely a winner in the family! We’ll be making it more often.

Tikka Masala
6 garlic cloves
6 tsp coriander pwdr
3 tsp cumin
3 tsp paprika
4 tsp garam masala (Indian spice)
1 1/2 tsp salt
3 8oz cans tomato sauce

Chop up a head of cauliflower & broccoli and about 8 carrots thinly sliced. Put broccoli and cauliflower in a saucepan with all the ingredients above and steam for about 15 minutes, stirring intermittently. Meanwhile, steam carrots in a steamer (or boil in a separate pan) because carrots take a little longer and keeping them separate will speed them up.

Add 2 cups chicken TVP and 4 cups water to a seperate saucepan, and bring to a boil. Once TVP has soaked up most of the water, add:
1 Tbsp Lemon Juice
1 tsp cumin
1 tsp black pepper
1/2 tsp cinnamon

Stir until most of the water is gone, and then add TVP to the cauliflower & broccoli sauce. Add carrots and stir everything together well. Serve on top of rice! I used leftover rice from my fridge so it was a quick and easy meal.

But here’s the rice recipe I used so you can make a big batch and keep it in the fridge to make dinner prep go faster!

Flavorful Rice Recipe
4 c uncooked rice (I use basmati)
8 cloves fresh garlic (diced in food processor)
4 tsp lime juice
4 cups water

You will need to also make in a separate jar:
Vegan Chicken Broth Powder:
1 1/3 c nutritional yeast
2 tbsp onion pwdr
1 tbsp garlic pwdr
1 tsp thyme
1 tsp rubbed sage
1 tsp paprika
1/2 tsp turmeric
1/4 tsp celery seed
1/4 tsp parsley

Mix the ingredients above and keep in a jar in the cupboard. For this recipe you will need 4 Tbsp of the powder and 4 Cups of water. Add those to the rice, and bring to a boil, then cover with a lid and simmer 20 minutes on low. Then fluf the rice and add:
4 Tbs lime juice
6 Tbs chopped cilantro
