Homemade Veggie Loaf (Vegan Meatloaf)

Tried this excellent veggie loaf from The Happy Herbivore book (she calls it “Hippie Loaf”).

Vegan “Meat Loaf”
1 15 oz can black beans (drained)
1 onion, diced
2 garlic cloves minced
1 large carrot shredded
2 celery stalks shredded
1 c chopped mushrooms
1 c cooked quinoa
1 Tbsp Italian seasoning
3 Tbsp brown rice flour (I used whole wheat flour)
2 Tbsp soy sauce
2 Tbsp ketchup
Throw all ingredients in the food processor to blend. Transfer to a greased pan, and pat down firmly. Bake for 45 minutes to an hour at 350 degrees.
