Chinese Vegetable Delight Stir-Fry

Vegetable Delight Recipe
Saute a chinese veggie mix (you can get from sam’s club) or the following veggies:
1 Bell Pepper chopped
2 Thin Zucchinis Sliced
2 Carrots Sliced Lengthwise
8 oz Mushrooms, diced
1 Tub Tofu, cubed
1 Head Broccoli, chopped
1 can Water Chestnuts

Meanwhile, make the stir-fry sauce in a separate saucepan:
Stir-fry Sauce
1/4 cup Soy Sauce
2 Tb extra virgin olive oil
2 Tb rice wine or cooking wine
1 1/2 cups chicken broth or veggie broth (see the homemade chicken broth recipe here)
2 tsp sugar
2 tsp rice vinegar
1/2 tsp onion pwdr
1/2 tsp garlic pwdr
1 tsp ginger
2 Tb Cornstarch -dissolve in a cup with a little water first to avoid clumps

When sauce thickens, add to the stir-fry veggies and enjoy with cooked brown rice!
