These pancakes are moist and sweet, and don’t need any syrup. You can serve with fresh fruit, plain old butter, or jam.
Stir 6 tsp EnerG Egg replacer powder in 1 cup water. Then place with remaining ingredients in a blender:
1/2 cup flax seed
2 cups water or almond milk
1 cup protein powder (your favorite brand for smoothies)
1 1/2 cups rolled oats
1 1/2 tsp vanilla (we used almond flavoring)
1 1/2 cups frozen berries
3 tsp coconut oil
1 tsp baking pwdr
1 tsp baking soda
Blend ingredients in blender until smooth. Heat a nonstick pan on medium/low heat and spray with olive oil. Then pour pancake the radius of a softball onto the griddle for easier flipping. Wait till bubbles have risen and popped, shake the pan slightly to see if the pancake slides easily, and you’re ready to flip. Top with fresh fruit or jam and enjoy!
