Southwestern Egg Rolls- Totally Vegan & Delicious!

Sorry it’s been forever since I’ve posted. I’ve been busy managing 3 other websites/blogs, doing wedding photography, and of course taking care of 2 kids (including one birthday party!)

The good news is that I lost 5 more pounds, totaling 15 since I became vegan (which is all the extra weight I really had.) And I’ve been eating just as much as I ever have.

We’ve gotten into a nice routine of making the same meals over and over again, which means we can make them faster as well. We’ve perfected this Cafe Rio Vegetarian Salad and that’s mostly what I’ve been eating for the last few weeks and lost 5lbs.

We just make a huge batch of rice and beans, and store the cilantro-lime dressing in a container- then right before dinner all we have to make is the pico and guac so it’s pretty fast now.

Another favorite is chinese potstickers with TVP and spinach. And we just discovered this Southwestern Egg Roll recipe like the ones they serve at Chili’s Restaurant that is totally delicious as a vegan meal.

Southwestern Egg Rolls (totally vegan & delicious)

1 tablespoon vegetable oil
2 tablespoons minced red bell peppers
2 tablespoons minced green onions
1/3 cup frozen corn
1/4 cup canned black bean, rinsed and drained
2 tablespoons spinach, shredded
2 tablespoons diced canned jalapeno peppers
1/2 tablespoon minced fresh parsley
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/4 teaspoon salt 1 dash cayenne pepper
Reconstituted TVP (optional)

Just throw all the ingredients in a saucepan and heat.

(We actually omitted the chili powder, jalapeno and cayenne pepper, and instead make the spicy sausage-style seitan at the end of this post.)

Lay out the egg roll wraps, put a Tbsp of mixture in each, fold over the side corners, roll the 3rd corner up and wet the last corner to seal the egg roll.

Another regular meal of ours is this Whole Wheat Veggie Pizza

I just throw the dough ingredients in the bread-maker on the dough setting, and let it mix and rise for 2 hours.
Then we top it with as many veggies as we can pack on there, and the fresh avocados after it comes out of the oven make it delicious.

Last time we made this pizza, we made our own homemade pizza sauce with tomatoes that needed to be used.

We also tried the spicy sausage-style seitan recipe from the happy herbivore book and it added a distinct Pepperoni flavor which was awesome! Seitan=Meat Substitute

Just slice it up like pepperoni’s and throw it on the pizza, or crumble it like sausage! This also worked beautifully in the Southwestern Egg Rolls I posted above!

Another easy favorite is the versatile vegan cheezy sauce recipe I posted a while ago. We put it in Broccoli Rice casseroles, or with Pasta Noodles and Broccoli.

For lunch, I like easy sandwiches, and found some fun Roasted Tomato spreads that are great. Then just top your bread with lettuce, zucchini, and avocado and you’ve got a great sandwich.

Happy Plant-Eating! The way I feel physically has improved SO MUCH since I became vegan and started eating more water-based plant food, I can’t even begin to tell you how amazing it is.
