I was craving ice cream a few weeks ago and looked around for different homemade vegan ice cream recipes to try with our new ice cream maker. This one turned out pretty well, but I think next time I would add sugar or something. 🙂
I based this recipe from the one I found on this website but made my own changes.
Vegan Dairy-Free Vanilla Ice Cream
1 cup almond milk
1 ripe banana
3 Tbsp almond butter
1 tsp vanilla
1 tbsp sugar (add more to your taste)
1 cup vanilla soy yogurt (optional)
Sounds simple enough, but the hard part is making almond butter from scratch. Check out this awesome website for almond butter instructions with pictures for every step of the process.
I blended up the almonds in the food processor just like the instructions said, and it turned out perfectly. Personally, I wouldn’t use this as a spread for toast as it is pretty bland compared to peanut butter.
Blend up all the ingredients in the blender or food processor. Then you can put it in your ice cream maker, or pour into ice cube trays and blend up later if you don’t have an ice cream maker.
