Vegan Spaghetti (squash) and non-Meat Balls

My good ol’ sister-in-law, or Antie Rachael as my kids call her, made some spaghetti with a spaghetti squash and told me it was delish. Well I decided to try it with some Qunoa vegan meat balls, and she was right! It was delicious.

The “meatballs” are from the following Happy Herbivore recipe:
Veggie, Bean & Quinoa Croquettes
15 oz kidney beans, drained
1 small onion diced small, minced
1 medium zucchini, diced small, minced
1 large carrot, shredded, minced
2 garlic cloves, diced small minced
1 c cooked quinoa
2 Tbsp soy sauce
2 Tbsp ketchup
2 Tbsp steak sauce (i did without)
1 Tbsp yellow mustard
1 Tbsp Italian seasoning
1/4 c wheat gluten

Mash all ingredients together then form into round balls and bake in the oven at 350 degrees for 25 minutes.

Meanwhile, steam a large spaggheti squash and then scrape it from the rind into a bowl. Pour in 1 can spaggheti sauce, add the meatballs after they’ve cooled, and warm it all up again!

I thought it was delicious, and my kids and husband liked this so it’s a keeper!
