Comfort Food: Vegan Mac and Cheese

I decided to give this another try since Isaac kept asking for Mac & Cheese recently, and I combined two recipes together.

Now THIS is comfort food. This was the BEST knock off recipe I have tried so far. Kids scarfed it down, and I was in heaven.
No substitutions. I tried it last time and it didn’t work 😉

Vegan Mac & Cheese Recipe
1 Pkg Whole Wheat Macaroni Noodles
Cook noodles according to package directions.

Then stir in a sauce pan the following ingredients:
2 1/2 c Almond Milk
4 Tbsp Yellow Miso (found near salads & tofu in health food stores)
1 c Nutritional Yeast (found near supplements & vitamins)
5 Tbsp Cornstarch
3 tsp garlic Pwdr
3 tsp onion pwdr
1 tsp paprika
1 tsp turmeric

Place in a blender:
1 cup cashews
1/3 cup lemon juice
1 1/3 cup water
1 1/4 tsp salt
Blend the ingredients till smooth, and then add to the saucepan.

Stir on medium heat till you have the desired consistency. Then drain your noodles and add them to the sauce!

Then check out these great chocolate zucchini muffins I made from the Happy Herbivore cookbook. Which is only like $11 on amazon right now and totally worth it.

And I finally got a picture of the bagel sandwiches I keep raving about. These are super delicious, and one sandwich has your entire daily value of protein. First, here’s the spread and how to make it.

Guacamole Sandwich Spread
1 Avocado, mashed
1 Tomato, diced
1 Can Corn, drained
1 Can Black Beans, drained
2 tsp Lime Juice
Optional Addition:
Blend a pkg of tofu in the blender with 1 bunch spinach, 1 cup cashews, and 1 1/2 cups water. Once it’s blended smooth, add it to the avocado mix.
Then add for flavor:
2 Tbsp Onion Pwdr
2 Tbsp Garlic Pwdr
1/2 Tsp Salt
2 Tbsp Sweet Basil
Mix it all together and spread it on some whole wheat bagels!

Some other great finds I wanted to share with you:

Kashi Go Lean Cereal. Check out all the different grains in this cereal with no oils or processed sugars. This cereal tastes as good as it is nutritious! You can find it anywhere. We got it at Maceys for $3/box on sale. We eat it with Almond Milk.

The other great thing we’ve been drinking is this Emergen-C Immune Defense. The kids were getting runny noses, and I’m hoping to wipe it out by supercharging the body’s own healing powerhouse, the immune system.


You can never overdose on vitamin C. And after seeing the incredible video of the cancer patients who were healed by injecting them with straight vitamin C, I can’t get enough of it for my immune system. I like the simple unaltered ingredients in this drink, and my kids think it’s “Soda” so that’s awesome!
